The American Red Cross Blood Mobile will be at Trinity UM Church on Monday, April 24 from 2 until 7 p.m.

The American Legion Post 290 meets at 7 p.m. the second Monday of each month. They ask that members join them.

The American Legion Auxiliary Unit 290 meets at 7 p.m. the fourth Tuesday of each month. They also ask that members join them.

Zucchini Chips

Ingredients:

3 large zucchinis

1 cup Parmesan

Garlic salt or McCormick roasted garlic and herb seasoning to taste

Black pepper

Directions:

Slice zucchini into 1/4 strips (chips); in a bowl combine Parmesan, garlic seasoning of choice, and pepper. Place zucchini chips in dry Parmesan mixture. Line cookie sheet with foil. Preheat oven to 425 degrees. Place chips on lined cookie sheet. Sprinkle extra Parmesan mixture on top of chips. Bake chips for 10 to 15 minutes.

Cucumber and Tomato Feta Salad

Ingredients:

2 English cucumbers

2 avocados

1 pack of cherry tomatoes

1 pack of cherry yellow tomatoes

1 red onion

2 tbsp red wine vinegar (or more to taste)

3 tbsp olive oil (EVO)

2 tsp lemon juice

1 container feta cheese

Parsley for garnish

Directions: Cut vegetables into bite size pieces. Add vegetables to bowl. Add red wine vinegar, olive oil, lemon juice, and feta cheese crumbles. Garnish with parsley.

Sour Cream Coconut Cake

Icing:

2 cups sugar

2 cups sour cream

12 ounce package frozen coconut

Night before baking the cake, prepare the icing. Stir all together, really well, and place in the refrigerator overnight in a covered dish.

Cake

Bake 2 layers of your favorite white or yellow cake mix to the directions on the box. Cool completely. Cut each layer in the middle, making 4 thin layers (Optional: mix ½ cup water and 4 tablespoons sugar, make more if needed. Put the sugar water on each layer as you put the cake together) Add icing between each layer, side and on top. Best coconut cake I’ve ever bake, family favorite.

Pig Eating Cake

1 box golden butter cake mix

½ cup oil

1 (8 oz) can mandarin oranges

3 eggs

1 (16 oz.) Cool Whip

1 (3 oz.) box vanilla instant pudding mix

1 (16 oz.) can crushed pineapple

Sift cake mix (keeps out the bubbles) and add oil, oranges and eggs (save out a few of the oranges to go on top of the cake when frosting). Pour into greased and floured cake pans. Pour cake mix batter, smearing the sides of the pans so that the batter is lower in the middle of pans than on the sides. This makes the cake layers cook evenly and flat. Mix topping of Cool Whip, pudding and crushed pineapple; pack between layers. No need to spread on side. Use saved orange slices to go on top of the cake.
